I love butternut squash bisque…nom nom nom:)
And it’s super easy!
For this particular soup, I made it like this…
I cubed two butternut squash, and 2 sweet potatoes. Then I thinly sliced 2 stalks of leeks from the whites to half way up the greens.
I put it all in a big pot with some water and a veggie bouillon cube and boiled it until the veggies were all nice and tender.
Then I took it off the heat and stirred in a can of Pumpkin puree and about a half can of coconut milk. I plugged in my handy Braun Hand Blender and blended it all up and added in some salt and pepper and cayenne and I’m pretty sure I threw in some ground ginger and garlic powder too 🙂 Then you can add more veggie broth until it’s the thickness or thinness that you desire and enjoy!
