Crystal introduced me to quinoa. Quinoa is a grain-like crop more closely related to spinach and beets than grain. However; I think of it as a round nutty version of rice. I am a huge fan of quinoa salad and the other day Crystal mentioned that there are also recipes for quinoa pudding. Could it be? These protein packed spheres are not only great for lunch and dinner but dessert and breakfast too! Of course, being the the adventurous cook I am, I had to try it and share it with you all. This is not your classic Goldilocks porridge, perhaps if she got lost in the woods and encountered a vegan household of bears, this would have been what she tasted. Though I would think, hot, cold, or in the middle, you can enjoy this yummmy nutty fruitty treat at any degree of fahrenheit.
I did not have all the ingredients at hand, so I improvised a little. I gotta tell you, I was not really sure how it was supposed to turn out…but I’m sure the vegan bears would have been pleased indeed with my interpretation.

I did not have any raisins and a word to the wise, don’t add both tsp of the extracts, it was incredibly overpowering.
