Kale Garlic Poblano Hummus – Recipe

Since Ben and I plan to basically live in the Honda Element for 4 months next Summer while traveling to 48 states… and we hope to still have money left over when we’re done… we plan to eat a lot of hummus and other really cheap and easy foods.  So, I’ve been experimenting with ways to add some variety so we don’t get bored.  I think this one is a winner, though it will have to be modified a bit when we’re on the road since we won’t have access to an oven for roasting the veggies.

Ingredients:

Powdered Hummus – purchased from the bulk bin at any healthy foods store (add boiling water as instructed)

1 or 2 roasted Poblano Peppers, steamed & peeled

Roasted Garlic Cloves (to taste.  I used 4)

A handful of fresh Kale

Olive Oil to taste

Lemon Juice to taste

Cayenne Pepper to taste

Salt to taste

Pile all the extras onto the hummus and then use a food processor to mix it all up!  (I used my wonderful braun hand blender, which will be coming along on the road & used at gas station power outlets)

Serve up on some flour free Rye Wasa:)
